Beets!

Since the veggies are popping out of our garden in full force...why not highlight each one?  While I'm on a beet kick, let's start there.

Beet Bruschetta

We are knee deep in beets right now, so I wanted to share this fabulous recipe from Marge's Next Meal.   What a great way to enjoy this bright red vegetable. You can find the recipe here.  Thanks Marge!

Beets

Ah beets.  I still don't know what to do with them.

I love pickled beets, but how else do I eat them?

Any suggestions?

Beets & Bunnies

I am so embarrassed to have let this much time pass since my last post.  I've decided to break from tradition a little bit and just post some projects I've been working on.

For the next few days I'll be sharing the recent postcards I've designed...inspired from my fabric patterns.

This is "Beets & Bunnies" available as a postcard and fabric.

Borscht

This is a very easy and colorful soup with an eastern European heritage. I cannot wait to harvest my beets now!

Take a look at this delicious recipe on the Prairie Story website.

Suishi and Beets

While making my daily salad with cottage cheese I realized it was missing the all important tangy beet topping. A quick trip to the store later I found myself with a jar of beets...and suddenly a small plastic box of cucumber suishi also. I needed a snack, walked past the deli, saw the little white circles and thought, its got to be healthier than chips. Suishi is a great snack, but don't worry, I didn't eat them with the beets. {available}
