A big bowl of fresh veggies was served at the luncheon I attended earlier this week. It was simply large cuts of cucumber, red and orange pepper, olives, and onions covered in lemon juice and olive oil. Feta cheese was served on the side. I can't tell you how yummy it was. I really miss being able to run out to the garden for fresh vegetables (I say this as we're being blasted by a blizzard!).

Cucumber Tomato Swap
I love cucumbers and my husband loves tomatoes, but neither of us like the opposite. The result is the "swap". When we are at a restaurant peering into our mixed salads, we each poke the appropriate vegetable (or fruit to some) with our fork and gently place it in our spouse's salad. The result is a salad monoculture making us both happy.

Cottage Cheese
Salad just isn't complete without cottage cheese gracing the top. My mom started me on this habit and now I've started my kids on the same. Though my son will eat a plain lettuce salad, he always has his ceremonial complaint when the cottage cheese is absent.{available}
