Radishes!

The timing just isn't right.  I love making a salad that includes both radishes and cucumbers, but they are never ready in the garden at the same time.  My salad?  Couscous, radishes, cucumbers, lemon juice, olive oil, plus salt and pepper.  Simple and tasty.

Cucumbers

We just picked our first cucumber and I'm so excited!  I've already stocked up on the oil and vinegar.

Fruit Vegetables

You've heard the saying that a tomato is really a fruit...well, it's true.
The rest of these are also fruits.  Botanically speaking, it's anything with a seed in it.

These are also all vegetables.  Without getting too deep, the word vegetable is a culinary term, not a botanical one.  If you're cooking they are vegetables, if you're classifying plants they are fruits.  I'm sure I've over simplified this for the botanists out there, but hopefully you get the general idea.  You can find the print here.

The Tomato/Cucumber Swap

I love cucumbers and my husband loves tomatoes, but neither of us like the opposite. The result is the "swap". When we are at a restaurant peering into our mixed salads, we each poke the appropriate vegetable with our fork and gently place it in our spouse's salad. The result is a salad monoculture making us both happy.

Cucumber and Melons

Cucumbers and melons are fabulous on their own, but try pairing with lime juice and chili flakes. Now that's something new. Visit Family of Foodies to learn more.

Cold Beetroot Soup with Cucumber

The ruby-red color of this soup was enough to capture my interest. It's a lovely cold dish with a unique mix of flavors blended by Anna Sokha of Godful Food. {reserved}

Cucumbers

Last week I learned that cucumbers are 95% water and have very little nutritional value. It seems any food I love brings no benefits.

Cucumber Tomato Swap

I love cucumbers and my husband loves tomatoes, but neither of us like the opposite. The result is the "swap". When we are at a restaurant peering into our mixed salads, we each poke the appropriate vegetable (or fruit to some) with our fork and gently place it in our spouse's salad. The result is a salad monoculture making us both happy.
